Winemaking: 2 weeks of fermentation in stainless steel tanks.
Sulfur: 0/0 (no added sulfites).
Producer: Blandine and Jérémy Borde acquired this estate in 2017 and immediately shifted toward organic viticulture and winemaking without additives, except for very small doses of sulfites when necessary. They are also the successors to the respected Didier Michaud at Planquette. Their cuvée Cerf is made from Cabernet Sauvignon and Merlot, aged in tank and with only a very small addition of sulfite. The wine is delicious—fluid, fruity, and pure, with fine, ripe tannins.
